If you have children who are picky eaters. I bet you spend time like me. Trying to come up with ways to make sure all the food groups enter your dinner plan, in ways that the children will consume them.
My two grand children take after their mom so much that they are very picky like my daughter. She hated cheese but loved noodles and butter. We came up with a few ways to make pasta salad that she would not mind eating.
My other two daughters love Mac & Cheese. But one will not eat meats and the other is very picky on her veggies. So I got in the kitchen and created a Mac & Cheese casserole that both of them wolfed down in seconds.
I just added cut up bacon and chicken, along with some green peppers, onion and carrots. It was pretty easy I prepared the noodles as usual. Then I steamed the green peppers, onion and carrots. I had the chicken and bacon already cut up and baked. So all I had to do was mix the ingredients and cover with cheese sauce. Bake at 350 degrees, covered for 30 minutes and then remove cover and brown for 10 minutes.
It filled the house with a wonderful smell and it tasted so good. The kids scarfed it down and begged for more. The received their veggies, their meat, their bread (noodle) and their calcium (cheese) for the day.
So get creative when you have those hard to please eaters. Cooking can be fun and rewarding when you see smiles on every child's face.
